Apple Bran Muffins

I can't get enough of all things apple right now. These apple bran muffins have the perfect blend of cinnamon spice paired with a tangy and sweet apple. I found a Gala apple was a great apple for texture and taste in these muffins but feel free to use your favorite type of apple. For a quick breakfast on the go or a lunchtime snack these muffins are a Fall must have. 

Apple-Bran-Muffins-Recipe

Apple Bran Muffins

Ingredients:
1 1/2 cups All-Bran Original cereal
1 cup skim milk
1 cup all-purpose flour
1/2 cup light brown sugar (lightly packed)
4 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 eggs
1/4 cup vegetable oil
1 Gala apple (peeled and diced)
Cinnamon sugar

Directions:

Preheat oven to 400 degrees F and prepare muffin pan with liners. In a medium sized bowl combine the cereal and milk and let stand for at least 2 minutes until softened. In a large bowl combine the flour, brown sugar, baking powder, cinnamon, nutmeg and salt. 

After the cereal has softened add eggs and oil to cereal mixture and beat until combined. Add this mixture to the dry mixture stirring until combined. Fold in the apples and portion into prepared muffin pan with an ice cream scoop. Top muffins with cinnamon sugar and bake for 20 minutes.
