Raise your hand if you're obsessed with avocado toast. I'm sure most of you reading this raised your hand because avocado toast is the absolute best breakfast, snack or lunch. To switch things up I added a scrambled egg on top for a little extra protein and now I'm hooked.
The simplicity of egg and avocado toast is what makes this dish so delicious and incredibly easy to make. You could also add tomatoes, black beans, cheese or your favorite roasted vegetables for an extra twist.
Egg and Avocado Toast
1 teaspoon unsalted butter
1 large egg (beaten)
1 slice whole wheat bread (toasted)
Hot pepper flakes
Melt the butter in a small nonstick skillet over medium heat. Add the beaten egg to the skillet and season with a pinch of salt and pepper. Scramble the egg. Meanwhile, in a small bowl mash the avocado. Spread the avocado on toast and top with scrambled egg. Sprinkle with salt, pepper and hot pepper flakes.
