Blueberry Orange Bread

With spring just around the corner I'm loving the fresh produce I'm starting to see at my local grocery store. Blueberries are one of my absolute favorites so I decided to try this blueberry orange bread for a little weekend treat. The combination of blueberries and orange is a match made in heaven and the sweet crispy top gives this bread great texture.

Blueberry Orange Bread (adapted from Taste of Home)

Ingredients:
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup orange juice
1/3 cup water
2 tablespoons butter (melted)
1/4 teaspoon vanilla
2 tablespoons grated orange peel
3/4 cup fresh or frozen blueberries

Directions:
I a large bowl combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl combine the egg, orange juice, water, butter, vanilla and orange peel. Add these ingredients to the dry ingredients and stir just until combined. Fold in the blueberries and pour into a greased and floured loaf pan (8 in x 4 in). 

Bake the bread at 350 degrees F for 65-70 minutes or until a toothpick inserted in the center of the bread comes out clean. Cool for at least 10-15 minutes and transfer to a wire rack.
