Oatmeal Waffles

Most of you know brunch is my favorite meal (I probably need this t-shirt). When it comes to waffles this recipe for Oatmeal Waffles is a true winner passed down from my grandma. You might think these waffles will be dense or heavy, but they have a crispy yet fluffy texture that pairs perfectly with your favorite toppings. You can also make this batter the night before so you can enjoy these waffles after sleeping in on the weekend. 


Oatmeal Waffles

1 1/2 cups all purpose flour
1 cup quick cooking rolled oats
1 tablespoon baking powder
1/2 teaspoon cinnamon
14 teaspoon salt (optional)
2 eggs (slightly beaten)
1 1/2 cups milk
6 tablespoons butter (melted)
2 tablespoons brown sugar

In a large mixing bowl stir together flour, oats, baking powder, cinnamon, and salt. Set this mixture aside. In a smaller bowl stir together the eggs, mil, butter and brown sugar. Add to flour mixture and stir until blended. Pour batter on the grids of pre-heated lightly greased waffle iron. Serve with your favorite toppings.
