Pumpkin Banana Walnut Bread

There's nothing better than the smell of this pumpkin banana walnut bread baking in your oven on a crisp Fall day. I have a slight obsession with all things pumpkin these days (no surprise) and this bread was just what I was craving. With a hint of banana flavor and a little kick of ginger spice this pumpkin bread is a must try. 


Pumpkin-Walnut-Bread-Recipe

Pumpkin Banana Walnut Bread (adapted from Nestle)

Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1 teaspoon baking soda
1/4 teaspoon salt
1/2 can pure pumpkin
2 large eggs
1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 cup very ripe bananas, mashed
1/4 + 1/8 cup vegetable oil
1/2 cup chopped walnuts
Cinnamon sugar

Directions:
Preheat oven to 350 degrees F and grease and flour a 9x5 inch loaf pan. Combine flour, baking powder, cinnamon, ginger, baking soda, and salt in a medium bowl. In a large bowl combine the pumpkin, eggs, granulated sugar, light brown sugar, bananas and vegetable oil and beat until smooth. Gradually beat in the flour mixture and fold in the walnuts. Spoon into prepared loaf pans and bake for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack for 10 minutes and removed bread from pan to cool completely on wire rack.
