Apple Bread

It's apple time folks! I can cross off Apple Bread from my Fall Bucket List and trust me this recipe is a Fall must. This bread is perfect for a breakfast on the go or serve with some cinnamon ice cream for dessert. Use a sweet apple (like Honeycrisp) for a delicious combination of diced apples and spicy cinnamon flavor. 


Apple Bread


1 1/2 cups sugar
3/4 cup butter
3 eggs (beaten)
3 cups flour
3/4 teaspoon salt
1 1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
1 teaspoon cinnamon
1 1/2 teaspoon vanilla
3 cups diced apples (I would recommend Honeycrisp)
Cinnamon sugar (for topping)

Preheat oven to 350 degrees F. Prepare loaf pan with cooking spray and flour. Mix the sugar and butter together until well combined. Add in the beaten eggs and mix until combined. Sift together the flour, salt, baking soda, baking powder and cinnamon. Add to the butter mixture a little at a time until just combined. Add the vanilla and gently fold in the diced apples (don't over mix). Pour the batter into prepared loaf pans and top with cinnamon sugar for a crunchy and sweet topping. Bake for 1 hour or until toothpick comes out clean.
