Peaches have finally made their appearance at my local farmers market, and I was really excited to make this recipe for a peach crisp. The great thing about this recipe is you can make individual crisps that make a fun statement for a party or the perfect serving size for yourself. The sweet peaches with a crunchy oat topping is the absolute best combination.
1 cup fresh chopped peaches
1 tablespoon cornstarch
For the topping:
1 tablespoon all-purpose flour
2 tablespoons butter
1 tablespoon light brown sugar
2 tablespoons old fashioned oats
Preheat oven to 350 degrees F. Lightly grease an oven safe ramekin. Combine the peaches and cornstarch in a bowl in place in the ramekin. For the topping mix the butter, flour, brown sugar and oats and place on top of the peaches. Bake for 25-30 minutes or until the peaches start to bubble and the topping is slightly brown.
