With the 4th of July this weekend I'm looking forward to picnics and bonfires with friends and family. This summer corn salad is everything that a salad should be with the perfect crunch and balance of flavors with fresh herbs.
You just can't go wrong with a recipe from Shauna Niequst, and this recipe from her latest book Savor is a home run. What I love about this salad is you can use customize it based on what you have in the house or based on what's in season. I'm not a huge fan of dill so I added fresh cilantro to this salad.
Summer Corn Salad (adapted from Shauna Niequist - Savor)
Ingredients:
6 ears of corn (cut from ears) - grilled, boiled or raw
1 cucumber (diced)
2 peppers (diced) - green, red, yellow or orange
1 pint grape tomatoes (cut in half)
1 bunch cilantro
1 bunch basil
8 oz feta cheese
Salt & pepper
Directions:
Combine all ingredients and adjust the salt and pepper to taste. This is a great salad to make ahead because it gets better after a few hours.
