Lemon Bars

Tasty Tuesday, Lemon Bars, Dessert, Recipe
During the spring and summer months I love a refreshing dessert. These Lemon Bars have a sweet and tangy lemon curd filling and a crumbly crust that make it hard to eat only one.

To get the most flavor out of these Lemon Bars make sure you use a fresh lemon and not the imitation  lemon juice (trust me on this). Finish these bars with a dusting of powdered sugar and you have the perfect spring dessert.

Lemon Bars (adapted from Betty Crocker)

Ingredients:
1 cup all-purpose flour
1/2 butter (softened)
1/4 cup powdered sugar
1 cup sugar
2 1/2 teaspoons lemon zest
2 tablespoons fresh lemon juice
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
Powdered sugar

Directions:
Preheat oven to 350 degrees F. Mix the flour, butter, and powdered sugar and press in an ungreased 8x8 baking dish. Bake the crust for 20 minutes (until lightly browned).

Beat together the sugar, lemon zest, fresh lemon juice, baking powder, salt, and eggs with an electric mixer for around 3 minutes until the mixture becomes light and fluffy. Pour the mixture over the hot crust.

Bake for 26-28 minutes and cool before serving. Dust the bars with powdered sugar and cut into squares.
