Strawberries are one of my all time favorite fruits so when I came across this recipe for Strawberry Oatmeal Bars I just had to give them a try. 

With a crunchy oatmeal base and topping and a sweet strawberry filling these bars are a win-win for a quick breakfast, snack or dessert (paired with ice cream or whipped cream). Trust me these fruity bars will quickly become your favorite go-to snack.

Strawberry Oatmeal Bars (adapted from Baked by Rachel)

Ingredients:
For the base/topping:
1 1/2 cups all purpose flour
1/2 cup granulated sugar
1/4 tsp salt
1/2 tsp baking powder
3/4 cup old fashioned oats
1/2 cup unsalted butter - cold (cubed)
1 egg white

For the filling:
1 1/2 cups strawberries (hulled and quartered)
1/8 cup granulated sugar
3/4 Tbsp cornstarch
1 Tbsp strawberry preserves (optional)

Directions:
Preheat the oven to 375 degrees F. Lightly grease an 8x8 baking pan and line with parchment paper.

Add base/topping ingredients to a medium bowl. Using a pastry cutter, work the ingredients until the butter is pea sized and the mixture is crumbly. Reserve 3/4 cup to use as the topping. Press the remaining mixture to the bottom of the prepared baking pan to create an even layer. 

Combine the strawberries, sugar, cornstarch and strawberry preserves in a medium bowl. Toss until the strawberries have absorbed the sugar and spread evenly over the prepared crust. Pour the remaining crumble topping over the strawberries.

Bake for 45 minutes or until the crumb topping is a light golden color. Cool in the pan for 5-10 minutes and carefully lift the dessert by grabbing the edges of the parchment paper. Cut into squares and enjoy.
