Fennel & Apple Salad

Fennel is one of my favorite ingredients to use with pasta, pizza or a salad. Although this vegetable can look slightly intimidating at the grocery store, fennel is very easy to prepare and the sweet anise flavor is a perfect addition to some of your favorite dishes. In this salad the fennel paired with a sweet apple, crunchy celery and a tangy dressing has become my go-to for lunch. 

Fennel & Apple Salad

Ingredients:
1 fennel bulb
1 Honeycrisp apple
A handful of Romaine or Arugula greens
1 cup celery (chopped)
3-4 tablespoons Parmesan (chopped or shaved)

For the dressing:
1/4 cup extra virgin olive oil
1/4 cup vegetable oil
1/2 tablespoon dried parsley
1/4 teaspoon pepper
1/8 teaspoon salt
2 tablespoons red wine vinegar 
1/2 tablespoon hot sauce
1 tablespoon sugar

Directions:
Start but cutting the fennel bulb vertically to remove the core. After you have cut the fennel bulb in half trim out the core at the base. Start slicing the fennel with a mandolin or on a cutting board in very small slices. Next, cut the apple and celery into thin slices. Combine the fennel, apple and celery in a bowl and combine with greens and parmesan. Prepare dressing and top salad with dressing just before serving.
