Cinnamon Sugar Pie Crust Cookies

I know what you're thinking "pie crust cookies?" Yes, it's a thing and yes they are delicious. When it comes to pie let's be honest that flaky, buttery crust is the best part and these cookies prove that fact. With a cinnamon sugar center these cookies are pretty close to a mini version of a cinnamon roll. You can't go wrong with these cookies for a holiday party or cookie exchange and trust me you won't be able to stop at just one.

Cinnamon Sugar Pie Crust Cookies

Ingredients:
Pie crust (homemade or ready-to-bake)
1/2 cup sugar
1 teaspoon cinnamon
6 tablespoons butter (melted)

Directions:
Preheat your oven to 450 degrees F. Use parchment paper to line a baking sheet and set aside. In a small bowl mix together the sugar and the cinnamon sugar for the cookie filling. Roll out the pie crust into a rectangle shape and brush the top with the melted butter. Sprinkle the pie crust with the cinnamon sugar mixture. Cut the pie crust into four equal squares and roll each piece into a log. Slice the log into 1/2 inch pieces and move to the baking sheet lined with parchment paper. Brush the top of the cookies with the melted butter and bake for 8 minutes or until cookies are lightly golden brown.
