Looking for a quick and easy lunch recipe? This broccoli pasta salad is super easy to make by cooking the pasta and broccoli together (genius). With some toasted pine nuts, Parmesan cheese, and fresh lemon I could seriously eat this pasta salad every day for lunch. You can choose your favorite type of noodle and also try a whole wheat pasta for a healthier option.
1 cup cavatappi, penne or fusilli pasta
2 cups broccoli florets
1/4 cup grated Parmesan
2 tablespoons extra-virgin olive oil
1/4 cup pine nuts (roasted)
1/8 teaspoon salt
1/8 teaspoon pepper
Cook pasta in boiling water with salt for approximately 7 minutes. Add the broccoli florets and cook until both pasta and broccoli for 5 more minutes until tender. Drain and rinse under cold water.
In a small bowl combine pasta, broccoli, Parmesan, salt, pepper and olive oil. Fold in the pine nuts and lemon zest just before serving.
