A bowl of broccoli cheddar soup is the perfect comforting dish on a cool Fall day. For lunch or dinner this soup is a must try and super easy to make. You can customize this soup by using your favorite cheddar or white cheddar cheese and leaving the broccoli in chunks if you prefer a hearty soup.
Ingredients:
1 1/2 cups vegetable or chicken broth
1/2 cup chopped onion
2 cups broccoli
1 small bay leaf
1/8 teaspoon garlic powder
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup skim milk
1/2 cup cheddar cheese
Directions:
Combine broth, onion, broccoli, bay leaf and garlic powder in a saucepan and bring to a boil. Reduce heat and cover and simmer for 10 minutes or until broccoli is tender. Remove bay leaf. Place all in blender or blend with an immersion blender for 30-60 seconds.
In the same saucepan melt butter and blend in the flour, salt and pepper. Add milk and cheese and cook until thick and bubbly. Stir in the broccoli puree and cook until heated.
