Watermelon Cake

Watermelon Cake? Yes, you read that correctly. Watermelon is a summer staple and serving it cake style is my latest obsession. This may look difficult or time consuming but honestly this presentation is super easy and will make quite a statement at your next summer party. Serve your guests a slice of watermelon cake and try sprinkling lime juice, basil, mint or even a little splash of tequila for a fun twist. 

Watermelon Cake (adapted from Martha Stewart)

Ingredients:
1 seedless watermelon

Directions:
Wash the seedless watermelon and lay it down horizontally. You will be using the center of the watermelon as the cake and the ends of the watermelon as the garnish. Cut about one third from each end and lay the center cut of melon on a cake plate. Cut the melon into 8 wedges. Using a melon baller take the two ends of the melon to scoop out melon balls. Arrange the balls on top of the melon cake and serve immediately or refrigerate until ready to serve.
