As a vegetarian it can be really difficult to find a cookbook with satisfying yet easy meals to prepare for everyone to enjoy. I recently received a copy of Pure Food and I quickly realized this book was different from all the rest.
As someone who's addicted to avocados I was really excited to try this Bibb Lettuce salad with grapefruit, avocado and a creamy avocado dressing. For a healthy lunch this salad is my new go-to option and perfect for serving this Easter.
Ingredients:
1 head Bibb lettuce
1 pink grapefruit (peeled and sectioned)
1 medium avocado (peeled, pitted and sliced)
1/2 cup slivered almonds
Dressing:
1/2 cup olive oil
1 tablespoon honey
1 medium avocado (peeled, pitted and sliced)
juice of 1 lime
1/4 cup fresh orange juice
sea salt and freshly ground black pepper
Directions:
Carefully remove the core of the lettuce and rinse well. Remove the leaves and lay them in a serving bowl. Top the lettuce with the grapefruit, avocado, and almonds and toss gently to combine.
For the dressing, combine the oil, honey, avocado, lime and orange juice in a blender. Season with salt and pepper and puree until smooth.
