10 brussels sprouts, stems removed
1/2 avocado diced
1 T parmesan cheese, shredded
Optional: pine nuts, dried cranberries, dried cherries, red onion, celery
2 T olive oil
Juice of half a lemon
Salt and pepper to taste
- Using a mandolin, slice brussels sprouts so they form a slaw looking consistency.
- In a bowl avocado and parmesan cheese.
- Meanwhile, whisk lemon juice and olive oil and season with salt and pepper to taste.
- Pour vinaigrette over salad and toss to combine.
