Chocolate Chunk Cookies

I made these Chocolate Chunk Cookies last week and just had to share the recipe with you. For a "classic" cookie taste with a soft center and crisp edges this cookie takes the win. The chocolate chunks are a perfect compliment to the buttery batter, and it's safe to say I'm obsessed.

Chocolate Chunk Cookies (adapted from Williams-Sonoma)

Ingredients:

1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, at room temperature
1/2 cup firmly packed light brown sugar
6 tablespoons granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups dark chocolate chunks (I chopped a dark chocolate bar)

Directions:

Preheat the oven to 350°F. Line a baking sheet with parchment paper.

In a bowl, whisk together the flour, baking soda and salt. In a large bowl, using an electric mixer or stand mixer on medium speed, beat the butter, brown sugar and granulated sugar until smooth (around 2 minutes). Add the egg and vanilla and mix on low speed just until blended. Slowly add the flour mixture to the egg mixture and mix just until incorporated (don't over mix). Switch to a wooden spoon or rubber spatula and stir in the chocolate chunks.

Using a small ice cream scoop drop the dough onto the prepared baking sheets, spacing the dough mounds at least 2 inches apart. 

Bake the cookies until the bottoms and edges are lightly browned - around 10-13 minutes. Let the cookies cool on the baking sheets for a few minutes, then transfer the cookies to wire racks to cool completely.
