Tasty Tuesday: Strawberry Freezer Jam

Most of you know by now I'm slightly obsessed with Sunday brunch that includes toast with my mom's famous strawberry jam. You will never find Smucker's in my refrigerator because let's be honest it just doesn't taste the same. Homemade strawberry jam (made with local Michigan berries) is a life changer. Once you've tried this jam you'll be hooked and anything found in the grocery store just won't compare (trust me).

Strawberry Freezer Jam:

Ingredients:
2 cups crushed strawberries (1qt. fully ripe strawberries)
4 cups sugar, measured into separate bowl
3/4 cup water
1 pkg SURE-JELL Fruit Pectin

Directions:
Mash strawberries with your hands until slightly chunky (not pureed) to make 2 cups crushed strawberries. Mix strawberries and sugar in a large bowl for 10 minutes, stirring occasionally.

Mix water and pectin in 1 qt saucepan. Heat to boiling, stirring occasionally. Boil and stir for 1 minute. Pour the hot pectin mixture over the strawberry mixture; stir constantly for 3 minutes.

Immediately spoon (or use a funnel) mixture into jars leaving 1/2 inch headspace. Seal the containers and let stand at room temperature for 24 hours before placing jars in the freezer.

  1. Yum. And this is exactly how I do mine (learned from my mom too) - got a good stash left in the freezer from last year, plus some raspberry. No Smucker's here either! I miss those Michigan berries though.
