Tasty Tuesday: Pumpkin Muffins

After working my way from A-Z fashion I've decided to start "Tasty Tuesday." Get ready for some amazing recipes, restaurant reviews and fabulous table settings that will leave you swooning.

To start the series off I have a perfect recipe for pumpkin muffins since everyone has a fall state of mind. These muffins have the perfect amount of fall spices and are actually pretty healthy for you. So no guilt if you decide to eat more than just one...

Pumpkin Muffins

Ingredients:
3 1/3 cup flour
1T baking powder
2t baking soda
1t salt
1t cinnamon
1t nutmeg
1/2t all spice
2 cups sugar
1/2 cup egg substitute 
1/2 cup vegetable or canola oil
1/2 cup buttermilk
2 large eggs
2/3 cup water
1 (15oz) can pumpkin
1/3 cup chopped walnuts

Directions:
Preheat oven to 350 degrees.

Combine flour and next 6 ingredients in a bowl.

Place sugar, egg substitute, oil, buttermilk and eggs in a large bowl and beat with a mixer at high speed until well blended. Add water and pumpkin and beat at low speed until combined. Slowly add flour mixture to wet ingredients. Gently fold in the walnuts. 

Line muffin tin with cupcake liners and bake for 22 minutes or until toothpick comes out clean. You can also sprinkle the top of the muffins with sugar before placing them in the oven for a sweet topping. (This recipe makes 24 muffins)
